A 440 is an easy torque monster without even trying. A stroker 360 will require more money in building, but if you have a smallblock tranny, etc, the stroker's cost will at least be partially offset but the cost of a big block tranny and engine bay mods for the 440. You're dealing with over 5000 lbs of truck, so the weight savings with the small block are negligible. So, it's really all in what ya wanna do.

If you can find a BB tranny for cheap, I would go with the 440 becasue like it was said, they are torque monsters, stock, a 360 ain't bad, but to be anywhere close to a stock 440 you'd need to add a lot too it. Personally tho, I would go with a 408 stroker(360 bored and stroked), you'll make gobs of power and you won't need to make any modifications with your engine bay and such. Plus I think its just cooler!
