would the 727 from a 79 work in a 1980 or vice versa?
tranny interchange?

Yup, but depending on the engine, you might need a different torque converter/flexplate.

Yeah, everything should work. 360's use externally balanced torque converters where as 318's use internally balanced converters. So if it came from behind a differenet motor, make sure you keep your old stuff.

ok thats good news. i have the tranny from my 80 sold to someone with a 79 with a 318. so they wouldnt need the torque converter then...

the only problem they may run into is if these are 4wd vehicles we are talking about.
since the 79 would be a fulltime and the 80 a parttime the tailshafts will not interchange between the 2 transfer cases. since the 203 uses a different length tailshaft than a 208
