i have (or will have) 360 79' 4b holley carb, 4" lift 35" tires off road 60% of the time.
What would be the best Thermostat ? I found a 185 and a 195. is there more out there? if so what would be the one that would work for my engine? :-\

There is also a 160 available, but I wouldn't go that way. Either one of the 185 or 195 degree thermostat's would do fine. It really doesn't matter which one, unless you have cooling problems.
I run a 185 in my 85 and have never had it get hot.

Generally thermostats come in 160, 180 and 195. I use both 180 and 195 thermostats. In the winter time i can tell a difference with heater output between a 180 and 195 thermostat. So if your heater is medocre then go with the 195.

I ditched my fan shroud for various reasons and run a 160. Engine runs about 180 all the time.
