what are all the engines you could drop into a stock 318 rc

If you are talking about what will fit. - just about anything you can imagine. any chrysler product.
If you mean what will bolt up to your current transmission. - Any small block 273-360.

Get a MP Megablock bored to 4.500" and a 4.500" stroker crank. You will then have a 572 cu.in.engine. Is that big enough? Put a 4.625" stroker crank in it and that will get you about 604 cu.in. That should be big enough and will bolt right in using RB motor mounts and oil pan.

Oh make it easy, just drop in a HEMI crate motor. they only cost about $11,000

Actually the indy maxx alum block or the keith black alum block and get 640 cid forget that cast extra weight stuff
